Three guys—James, Ryan, and Matt—met while working on The West Side. One day, they decided to move east. All three owners set out to create their version of a neighborhood pub. The result was The Greyhound Bar & Grill.
With three dramatically different geographic and cultural backgrounds, all three owners had a different idea of what “neighborhood pub” meant. The Greyhound hence became the Seinfeld of bars—a concept “about nothing.” Starting with Matt’s vision of the bars and taverns he grew up around in Cleveland, Ohio, and bringing in James’s upbringing in England and Ryan’s in Los Angeles, the Greyhound turned into an amalgamation of inspirations from all corners of their imagination.
Slowly, the “concept” sort of evolved to be about doing exactly what their id thought they should be doing, like pairing crazy esoteric Greek wine with chicken wings and an obscure weird Italian digestif, all while watching the Dodgers and listening to down-tempo acid electro funk. Literally nothing is off-limits.
The Greyhound is a full bar with 20 tap handles, mostly dedicated to craft beer but without a limitation on anything. The idea is to have beer for everyone, from casual drinkers to adventurous beer geeks. The wine list is small and exciting featuring value-driven Old World selections, hand-picked by the owners to satiate any palate. All spirits are placed to serve a niche for different palates rather than specific brands.
