We take traditional ingredients, spices and cooking techniques from around the South to create a taste without borders. The perfect example is the Voo Doo Tuna®, one of our dishes from 15 years ago. Yet, it’s still popular today because we take conventional ingredients like peppercorn, red wine, shallots and mustard and mix them to create an innovative sauce.
