Jonesy’s EatBar opened in June 2008, in the space was formerly our restaurant, The Dish Bistro. Leigh decided in the spring that her life needed a little simplification, and that running a higher end restaurant just wasn’t what she wanted to do. We began thinking about and researching new concepts, knowing that we wanted something warm and comfortable, small and manageable, with a focus on local craft beers, but still serving an exceptional list of wines by the glass with a menu of favorite global comfort foods. About halfway through writing the business plan, we came across the term “gastropub”…exactly our idea, all fleshed out and even defined in Wikipedia! Yay!
